Healthful Eating: Beyond Food, a Global Concept

Abstract

Producing a definition of healthful eating that expresses adequately the richness and the complexity of the eating experience is challenging. Still, the effort is crucial if one wants to promote behavioural change in the population, as well as a transformation of interventional practices, programs, and policies, and even the agri-food system. We explain that the biological, social, and environmental dimensions of healthful eating, along with the interactions among them, must be addressed. Once these dimensions are considered as a whole, the definition of healthful eating allows the identification of a wide range of strategic interventions to implement such eating. We suggest a continuum of eating quality that could be used to identify, in general, the food habits of persons or groups.

Élaborer une définition de la saine alimentation qui exprime de façon adéquate la richesse et la complexité de l'expérience alimentaire relève du défi. Pourtant, l'effort est indispensable si l'on souhaite promouvoir un changement de comportement de la population, de même qu'une transformation des pratiques interventionnelles, des programmes et politiques, et même du système agroalimentaire. Dans cet article, nous montrons que la saine alimentation doit être envisagée dans ses dimensions biologiques, sociales et environnementales, et dans leurs interactions. Une fois que ces dimensions sont considérées dans leur ensemble, une définition de la saine alimentation permet l'identification d'un large éventail de stratégies d'interventions ayant pour but d'implanter une culture de saine alimentation. Nous proposons également un continuum relativement à la qualité de l'alimentation qui pourrait être utilisé pour identifier, de manière générale, les habitudes alimentaires des personnes ou des groupes.
