Web-based Food Behaviour Questionnaire: Validation with Grades Six to Eight Students

Abstract

Purpose: The web-based Food Behaviour Questionnaire (FBQ) includes a 24-hour diet recall, a food frequency questionnaire, and questions addressing knowledge, attitudes, intentions, and food-related behaviours. The survey has been revised since it was developed and initially validated. The current study was designed to obtain qualitative feedback and to validate the FBQ diet recall.
Methods: “Think aloud” techniques were used in cognitive interviews with dietitian experts (n=11) and grade six students (n=21).Multi-ethnic students (n=201) in grades six to eight at urban southern Ontario schools completed the FBQ and, subsequently, one-on-one diet recall interviews with trained dietitians. Food group and nutrient intakes were compared.
Results: Users provided positive feedback on the FBQ. Suggestions included adding more foods, more photos for portion estimation, and online student feedback. Energy and nutrient intakes were positively correlated between FBQ and dietitian interviews, overall and by gender and grade (all p<0.001). Intraclass correlation coefficients were ≥0.5 for energy and macronutrients, although the web-based survey underestimated energy (-10.5%) and carbohydrate (-15.6%) intakes (p<0.05). Under-estimation of rice and pasta portions on the web accounted for 50% of this discrepancy.
Conclusions: The FBQ is valid, relative to 24-hour recall interviews, for dietary assessment in diverse populations of Ontario children in grades six to eight.

Résumé

Objectif: Le Food Behaviour Questionnaire (FBQ) en ligne comprend un rappel alimentaire de 24 heures, un questionnaire de fréquence de consommation alimentaire et des questions sur les connaissances, attitudes, intentions et comportements alimentaires. L’enquête a été révisée depuis sa conception et sa validation initiale. La présente étude avait pour but d’obtenir un feedback qualitatif et de valider le rappel alimentaire du FBQ.
Méthodes: Des techniques de «pensée à voix haute» ont été utilisées dans des entretiens cognitifs avec des diététistes experts (n=11) et des élèves de sixième année (n=21). Des élèves de diverses origines ethniques (n=201) inscrits en sixième, septième et huitième années dans des écoles urbaines du sud de l’Ontario ont rempli le FBQ et le rappel alimentaire dans des entretiens individuels avec des diététistes expérimentés. On a comparé les apports des groupes alimentaires et des nutriments.
Résultats: Les participants ont fourni un feedback positif au FBQ et des suggestions, notamment d’ajouter des aliments, d’insérer plus de photos pour l’évaluation des portions et un dispositif de feedback en ligne pour les étudiants. Les apports en énergie et en nutriments étaient en corrélation positive entre le FBQ et les entretiens avec des diététistes, en général et selon le sexe et le niveau scolaire (p<0,001 dans tous les cas). Les coefficients de corrélation intraniveaux se chiffraient à ≥0,5 pour l’énergie et les macronutriments, même si l’enquête en ligne a sous-estimé (p<0,05) les apports en énergie (–10,5%) et en glucides (–15,6%). La sous-estimation des portions de riz et de pâtes dans l’enquête en ligne représentait 50% de cet écart.
Conclusions: Le FBQ est valide, quant aux entrevues sur le rappel alimentaire de 24 heures, pour l’évaluation alimentaire de diverses populations d’enfants ontariens de la sixième à la huitième année.
